“Liberty Red “ is a large seedling found in Tehama County, just off the side of a frontage road. It is likely a seedling of another fig tree sitting just north at the edge of another fruit and nut orchard. The bush-like canopy is roughly 25 feet wide.
This is an average size fig, with yellow to green skin and red ribs. It bears a juicy red interior with light seed crunch. The flavor of this fig is sweet also reminiscent of a just underripe blueberry, in that it has blueberry undertones but still has that bit of tartness. Simmers down to a beautiful jam.
